Not all olive oils are the same. Thanks to the many varieties we have –in Catalonia alone there are five Designation of Origin– we can enjoy each of them according to the dishes we are going to prepare.
There are many varieties to choose from; for example, the olive oil from Siurana is very pleasant on the palate thanks to its intense flavour of green almonds and apples; the oil from Les Garrigues and Terra Alta is fruity, with an aroma of classical notes of tomatoes and a hint of almonds. Oils from Baix Ebre-Montsià are transparent, without veils; sweet and tasty. And finally, oils from L’Empordà have a perfect balance of spicy and tart taste, are very aromatic and evoke notes of aniseeds, artichokes, tomatoes, almonds and dill.
